Simple Eats // #1

This meal was extremely simple, especially when I make something different for myself than what the guys eat. Did I mention that it really tests my self control at times? That's been my biggest challenge when dieting, really. Is knowing when to say no to certain things that I really want. Like pizza or ice cream. Ugh.

Anyways, I cook a single serving of 10 minute brown rice, a serving of peas, feta cheese and mozzarella cheese. I absolutely love it. It serves as a good lunch or dinner. If you want, you can add meat of course. I try refraining from that.

What are some simple recipes you love?

Weight Loss // Nutrition

Have you ever thought: "It's time to finally start eating healthy?"

I have, and I do so often. Sometimes, it takes an encouraging word to push you, or a good look in the mirror, or even your favorite pants not buttoning anymore. I know that happens to people all the time, and it is a harsh reality but when we aren't comfortable, we aren't as happy and are always negative about our appearance. I'm not saying that appearance is everything. But, feeling comfortable is. And however you feel comfortable, then try to achieve that. But, you have to admit that deep down inside of you, you just don't like being uncomfortable. And I know, right now, that I am not comfortable with my weight or eating habits. So, it's time to change that and share it with the Internet to help keep me more accountable, because personally, that is one of my biggest struggles. I wont be sharing my weight loss goal, but I will share milestones, tips, tricks and a few other things.

The first thing that I had to do was get all the JUNK food out of the house. All of it, and no, I did not accomplish it by eating it all. I gave it to the boys to the devour (: And once all of your junk food is gone, go to the grocery store.

Tips for the grocery store:
  • Do not go while you are hungry,
  • try to go alone or with someone who is also making healthy choices,
  • and budget! Budgeting is the biggest thing when eating healthy because it is a little bit more expensive, but if you price it right, it really isn't. And healthy food is a lot more satisfying than unhealthy food.

Once you have gone grocery shopping, the first step is complete and since you really have nothing else to eat, you eat the healthy stuff, right? Not necessarily. Sometimes, it isn't that easy for people. And I am one of those people when it comes to either eating excessive or going out of my way to go to the store to get what I want to satisfy a craving. Basically, my self control is out of wack, so i have to be extremely diligent.

To do that, I try to keep a journal. Kind of like a food journal, but it has where I track my weight, exercise routines, feelings. So, I call it my "Being Healthy" journal, which I very highly recommend that you do when trying to lose weight, gain weight or be healthy in general.

Being healthy isn't all about losing weight, which is a common misconception. It's about what you eat, how much you eat, what you do to your body and the kind of activity you do.

So, the first exercise I want to talk about is Yoga:

It's a common misconception that yoga can't be used for weight loss, and that's not true. It can be used for weight loss, toning up, relaxation, a really good stretch, etc. I do it for all the benefits, and I may not be as great as some of the extremely experienced yogi's out there, but I am learning and trying. And it's a start. And I mean it when I say that, you have to start somewhere. Whether you start of slow or jump right in, it's best to do it and be uncomfortable in the beginning. It's worth it to start feeling comfortable in the end.

Eat plenty of fruits and vegetables, make your carbs smaller portions. You do not have to cut out all carbs, just eat a healthy amount. I will talk more on food later.

Drink protein shakes and take your vitamins. It's essential to have all the nutrition you need. These shakes are two of my favorites: Cookies and Cream and below is vanilla with a banana and V8 smoothie juice.

On that note, drink plenty of water. (I don't have water bottles, so I bring mason jars full of water to the beach). But, make sure you get enough water, that is extremely important. Water is a natural detox. If you are an advid water drinker, your first few days of drinking enough water, let's just say, you'll be visiting the bathroom a lot.

I'm off for a run! What tips and tricks do you have when it comes to being healthy?

Red Velvet Pancakes

Ok, so you could guess why I wanted to make these. They're red. And what season is it? The season of love, Valentine's Day. C and I wont really have time to celebrate it together because we have way too much going on, but we are taking two minutes and eating this super sweet meal together. I love him very much, and I am very grateful he is willing to try things I want to make.

 Ok, you'll need:
1 cup red velvet cake batter
1 cup pancake batter
1/3 egg whites (2 large eggs)
1/4 vegetable oil
2/3 water

Mix all the ingredients together and cook, just like you would pancakes. It really doesn't take very long. And they are extremely sweet.
My food doesn't look fantastic, but it tastes absolutely amazing. I, also, make very large messes.
My Red Velvet Box came with the icing, so I used it. We couldn't eat all these, actually, we barely made a dent in them, but they were very very good. Try them out!

Cook, eat and enjoy!

Healthy Salad

I've been trying to find ways to make way healthier meals, especially salads. I've decided to put way more protein on my salads because they fill you up better than fillers, like dried fruit, nuts, dried noodles and other things.

In this salad is baby spinach, cold cut turkey, cooked egg whites, cheese, sun dried tomatoes and olives (not in this picture). Keep it light and full of protein and you'll feel full and nourished.

Breakfast for Dinner, Yes Please!

Last night, we decided, spur of the moment to have breakfast for dinner. So, we went to the store and got turkey bacon and sausage, bagels and cream cheese and everything else I already had.

For the pancakes, I realized I didn't have normal eggs or milk, so I substituted with the Vanilla Almond Milk and Egg Whites, the boys liked it so much more than what they were like normally. It was kind of interesting. They were really good and a bit healthier (favorite combo). I, also, got to use my skillet I got for Christmas for the first time. I forgot how much I loved that thing!
These bagels have cream cheese and chopped up olives on them. There is a bit of a story behind these bagels that make them very sentimental to me. Aside from the fact that they are delicious, my biological father used to do this when he was alive and it's kind of a thing with my sister and I to eat these. They're delicious as well! I think you should try it. I'm thinking of having a blog post about different bagel toppings, will keep you updated!
i
I only ate the bagels (I ended up giving everything else to Cody, I was way too full).

Turkey Alfredo and Pasta

I actually cooked dinner for the first time since Christmas, so it is also the first time for the New Year. It wasn't hard, and I used what we had at home and made us all food.

Basically, our house always has someone over. And currently my other half's brother lives with us; and our friend always comes over and stays for about a week at a time.

I used 3 different types of pasta: linguini, bow-tie and shells
4 cans of ragu Alfredo sauce (I bought what was buy one get one free at Publix)
1.5 pounds of turkey meat
Oregano and Garlic Salt

I couldn't fit it all in the pot I had, so I ended up using the one I cooked the meat in.

It was super simple to make and tasted really good. At least, I think it was by the empty pots and pans and plates. It's the perfect 30 min meal. And you can obviously make it healthy by adding turkey meat, wheat pasta and even a healthier sauce.

Spinach Risotto

I love this dish, but i can't eat very much of it. Actually, my brother in law came up with the idea to eat it with tortilla chips, which Im going to try tomorrow with the leftovers.

Spinach Risotto:
Ingredients-
1. Cooking spray
2. One pund large shrimp, peeled and deveined. (Not pictured)
3. 1 T. Olive Oil (not pictured)
4. 2 garlic cloves minced
5. 1 cup uncooked Arborio or other medium grained rice (not pictured)
6. 3/4 cup dry white wine (i used white cooking wine)
7. 4 cups chicken broth
8. 1/4 cup chopped fresh cilantro
9. 10oz of spinach
10. 1/2 cup crumbled goat cheese

Preparing it:
1. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add shrimp to pan; sauté 4 minutes or until done. Remove shrimp from pan and keep it warm!
2. Heat oil in pan. Add garlic and cook for a minute. Add rice, cook for 1 min, stirring constantly. Stir in the wine, cook until liquid is almost completely absorbed, stir constantly.
3. 1/2 cup at a time, add broth...only when its almost completely absorbed (about 25 min). With the last 1/2 cup of broth add cilantro, spinach, cheese, and shrimp, stirring to combine.
Serve immediately.

It was really good. It was my brother in laws first time to eat it and he actually liked it. Also, i ran again today. And it was my friday at work, so now i have a three day weekend, which means working on my house and cooking more food. Ill be doing a home tour soon (: have a great weekend!
