Kale Chips

This was the first time I cooked kale chips. And, I must say, I absolutely loved it. I've been trying to find some healthy snacks for when I get small cravings every now and then. 

So, it's easy:
For my first time cooking it, I didn't cook a lot, because I wasn't sure if I would like it. So I did this.

What you need:
    A stalk of kale (or more).
    2 tablespoon oil
    Salt
    Red pepper
What to do:
    Preheat the oven to 375 degrees.
    Place the kale in the pan and lightly put olive oil on the kale. Then, sprinkle the salt on the kale and put it in the oven. Cook it until the edges are crispy and it's easily shaken on the pan. The amount I did only took 5 minutes and it was absolutely perfect.



And I dipped it into hot sauce (because I absolutely love hot sauce).

BBQ Chicken Pizza

Last night we ordered a pizza, because we got a free one through the Papa Johns Superbowl Coin Toss. And we compared, the boys liked mine so much better. It made me so happy! 


Crust:
Prep time: 35 min
Servings: approximately 12

1 cup warm water
1 tablespoon white sugar
2 1/4 teaspoon active dry yeast
3 tablespoon salt
2 1/2 cup flour

Mix everything but flour first. Then, add flour, put into ball and leave alone to rise for 10 minutes.


Garlic Butter:
Chop up garlic and melt butter and mix it together, set it aside till later.

BBQ Chicken:
Dice up chicken and cook all the way through. Then, in a bowl, mix your favorite bbq sauce and the chicken.

Final Steps:
Preheat oven: 425 degrees Fahrenheit
Cook time: 15-25 min

Spray the pan with pam!

Flatten dough into pan, then put garlic butter on the dough. Cover the pizza in the bbq chicken. Add Feta Cheese and Mozzarella.


Cook, Cut and Enjoy!

Healthy Salad


I've been trying to find ways to make way healthier meals, especially salads. I've decided to put way more protein on my salads because they fill you up better than fillers, like dried fruit, nuts, dried noodles and other things.

In this salad is baby spinach, cold cut turkey, cooked egg whites, cheese, sun dried tomatoes and olives (not in this picture). Keep it light and full of protein and you'll feel full and nourished.

Breakfast for Dinner, Yes Please!

Last night, we decided, spur of the moment to have breakfast for dinner. So, we went to the store and got turkey bacon and sausage, bagels and cream cheese and everything else I already had. 

For the pancakes, I realized I didn't have normal eggs or milk, so I substituted with the Vanilla Almond Milk and Egg Whites, the boys liked it so much more than what they were like normally. It was kind of interesting. They were really good and a bit healthier (favorite combo). I, also, got to use my skillet I got for Christmas for the first time. I forgot how much I loved that thing!
These bagels have cream cheese and chopped up olives on them. There is a bit of a story behind these bagels that make them very sentimental to me. Aside from the fact that they are delicious, my biological father used to do this when he was alive and it's kind of a thing with my sister and I to eat these. They're delicious as well! I think you should try it. I'm thinking of having a blog post about different bagel toppings, will keep you updated!

I only ate the bagels (I ended up giving everything else to Cody, I was way too full).

Vegetarian Chili

Ingredients:
Hot Sauce - to desire (completely optional)
2 tsp. Chili Powder
1 clove ofGarlic
2 tsp. Garlic Salt
2 tsp. Cumin
2 tsp. Salt
2 tsp. Pepper
2 Cans Black Beans- Drained and Rinsed
2 Cans Navy Beans- Drained and Rinsed
2 Cans Pinto Beans- Drained and Rinsed
2 Cans Red Beans- Drained and Rinsed
2 Cans Light Red Beans - Drained and Rinsed
3 Cans Diced Tomatos

Prep Time: 15 min

Cook Time: 2 hours on High

Instructions:
Take the drained beans and the cans of diced tomato and put them in the crock pot on low temperature (my crockpot only has four settings: off, low, hot and warm). Stir it together until its completely mixed. Ad 2 tsp of chili powder, garlic salt, cumin, salt and pepper and 1 clove of garlic. I like things spicy, so I added 6 dashes of my hottest hot sauce (it made it super spicy). Stir all together and let sit on High temperature. Over time, season to your preferred taste ( I added a lot of seasonings afterwards).
